Chicken Caesar Pasta Salad
What a great salad! And the croutons are my homemade recipe! Yummy! Very refreshing salad and perfect for summer or anytime!
The Caesar salad dressing mixed with the red wine vinegar and Parmesan made for a very tasty dressing! Had a little zip to it! And the bow tie pasta was perfect in this salad! I think bow ties are a chunky noodle and hold up very well in this salad! I buy the already cooked grilled chicken strips which you only have to heat thru and I also buy the already shaved Parmesan! Everything is easy making this salad!
Salad recipe adapted from allrecipes
12 ounces bow tie pasta
1 tablespoon butter
2 (9 ounce) bags Ready Cooked Grilled Chicken Strips (I buy Perdue brand in the refrigerated section near hot dogs NOT frozen) or any chicken you like
ground black pepper, to taste
salt, to taste
1 (8 ounce) bottle Caesar salad dressing
¼ cup red wine vinegar
½ cup shaved Parmesan cheese
12 ounces romaine hearts, chopped
20 cherry tomatoes, sliced in half
Bring a large pot of lightly salted water to a boil. Add pasta and cook for 8 to 10 minutes or until al dente. Drain and run under cold water.
Melt butter in a large skillet over medium heat. Add chicken, pepper and salt. Cook 10 minutes or until chicken is cooked through. Remove skillet from heat.
In a bowl, mix together salad dressing, vinegar and cheese. Toss together pasta, chicken, lettuce, and dressing mixture.
Place in large serving bowl. Top with tomato.
Garnish with croutons and shaved parmesan.
Garlic Butter Croutons My recipe
6 hamburger buns, cubed, or any buns you have
1 cup butter, melted
1 teaspoon garlic powder
Preheat oven to 325°
Melt butter and add garlic powder. Mix well.
Cut buns into cubes and place in a medium bowl. Pour melted butter mixture over buns and mix well. I used my gloved hands. Make sure all the cubes get good and buttery.
Place on a baking sheet and bake 8 minutes and check to see if they are at your desired crispiness. 8 minutes is perfect for our liking. You can bake a few minutes longer if you like them crispier.
Remove from oven and cool slightly. They are great served warm.
Save leftovers in an air tight container.
