Cheesy Wagon Wheel Casserole
We love Wagon Wheel pasta and I was happy to find this recipe using Wagon Wheels and this was the perfect recipe for Meatless Monday! I bet this would be good adding chicken, ground beef or your favorite meat as well!
Wagon Wheel pasta is a pasta that holds on to the sauce and cheese and as I like to say it's a "hefty noodle" The cheese and the sauce hanging on to the Wagon Wheels make for a filling and love in the tummy meal!
The pasta cooks in the sauce and water so that makes this recipe easy to throw together for a busy weeknight meal or anytime! This was great served with garlic bread!
Recipe adapted from Command Cooking
12 ounces wagon wheel pasta, dry, it will cook in the oven
24 ounces pizza sauce or marinara
3 cups water
salt to taste
dry Italian dressing seasoning packet, to taste, I used about a teaspoon
1/4 cup fresh basil, plus more for garnish, chopped
2 cups shredded mozzarella cheese
parmesan cheese, grated, for garnish
parsley, optional, chopped, for garnish
garlic bread for serving if desired
Preheat the oven to 425°
Spray a 9x13-inch baking dish with cooking spray.
In the prepared baking dish, stir together the pasta, marinara, water, salt, Italian seasoning and 1/4 cup basil.
Cover the baking dish tightly with foil. Bake for 25 minutes.
Remove from the oven, remove the foil, and stir. The pasta should be just shy of al dente.
Sprinkle the mozzarella cheese over the top of the casserole. Return the dish to the oven uncovered until the cheese is melted and the pasta is tender and cooked through, for about 5-10 minutes.
Garnish with the parmesan cheese, parsley, and the remaining basil.
Serve with garlic bread if desired.
