Ramen Noodle Casserole
My Daughter and Grandson moved back home with us and she bought Ramen Noodles from time to time and my Grandson loves the Creamy Chicken and you know what? So do I! I also like the Spicy Chili and I add cheese and crackers to that one and it's so good! When I ran across this recipe I knew that I was going to make it!
Delicious, cheap and easy! My family ate the entire casserole, no leftovers! I don't know why the tomatoes were the star of the show but they were! They were so flavorful with the beef flavoring from the seasoning packets and the beef broth! The recipe calls for Rotel tomatoes which are a little spicier than regular diced tomatoes but my hubby doesn't like them so I used regular diced tomatoes, oregano, basil, garlic flavor and they were perfect! The recipe also called for Velveeta cheese slices but I really didn't want to use that type of cheese so I had shredded cheddar on hand and it was perfect as well!
Dinner was awesome and if you like Ramen Noodles you will love this dish! If you've never tried them you should! It's the texture of the noodle that makes them so good and they are nice and curly and thin! My Grandson is so cute slurping them right up out of his hand!
Recipe adapted from Foodgasm Recipes
1 pound ground chuck
1 small sweet onion, diced
3 (3 ounce each) packages beef flavor ramen noodles
1 (14.5 ounce) can diced Rotel tomatoes, I used diced tomatoes, oregano, basil, garlic flavor
1¼ cups water
1 (14 ounce) can beef broth
2 cups shredded cheddar cheese
Preheat oven to 350°
Brown and crumble ground chuck. Drain. Set aside.
To the same skillet sauté onion in a little Extra Virgin Olive Oil. Return meat to skillet and add the 3 flavoring packets from the ramen noodles. Cook and stir for about 4 minutes.
Add the tomatoes, water and beef broth and bring to a boil. Add the ramen noodles and cook for about 4 minutes more.
Pour into 8x11 casserole dish and cover with cheese.
Bake 15 minutes or until cheese is melted.
