Creamy Smothered Pork Chops
Amazing dinner! Hubby said "We're having this again" and "Best Pork Chops Ever" and pork chops aren't his favorite meat! I love when I find recipes for pork chops and I don't have them often but I like them and it's a change up from chicken and beef!
This recipe was so simple but the taste was a party for the taste buds! I will call this a comfort food! Delicious! Creamy and lots of flavor gravy!
Recipe adapted from Diethood
4 bone in pork chops, 1 inch thick
seasoned salt, to taste
fresh ground black pepper, to taste
2 tablespoons olive oil
3 tablespoons butter, divided
1 large sweet onion, thinly sliced
salt, to taste
cayenne pepper, to taste
1 Tablespoon minced garlic
½ tablespoon chopped fresh thyme
½ cup chicken broth
¼ cup heavy whipping cream
chopped fresh parsley for garnish
Season pork chops with seasoned salt and pepper.
Heat oil and 2 Tablespoons butter in a large skillet over medium-high heat until butter is melted. Add pork chops to skillet and sear for 5 minutes per side, until golden brown. If skillet isn't big enough, cook the pork chops in batches. Transfer to a plate and keep covered.
Return skillet to heat and add remaining tablespoon of butter. Melt over medium heat. Stir in sliced onions and add a pinch of salt and cayenne pepper. Cook onions for 12 minutes, or until very soft and caramelized, stirring frequently.
Add garlic and thyme. Continue to cook for 30 seconds.
Pour in chicken broth and scrape up the browned bits from the bottom of the pan. Whisk in heavy cream and simmer for 1 minute.
Return pork chops and all the pork juices to the skillet.
Reduce heat to medium-low and continue to cook for 3 more minutes, or until pork is completely cooked through and sauce has thickened somewhat.
Remove from heat.
Garnish with parsley and serve.
