Sloppy Joe Casserole
This was delicious! Easy to throw together and bakes in no time!
The elbow macaroni with the ridges are the best! They hold onto the sauce well! I think by accident, as in the time that I sautéed the green peppers they had a little crunch to them and that was a wonderful surprise in the mix! Also the cayenne pepper that I sprinkled on the onions was another wonderful surprise! Gave it a little kick but by all means you can leave the cayenne off if you don't like a little spicy! I think cayenne goes great on a lot of things!
I served this with buttered bread! Perfect!
Recipe adapted from RENEE'S KITCHEN ADVENTURE
8 ounces dry Elbow Macaroni, try to get the elbows with the ridges
1¼ pound ground beef, brown, crumble, drain
1 Tablespoon olive oil
1 cup diced sweet onion
cayenne pepper, to taste
1 cup diced green bell pepper
2 (15 ounce) cans Manwich Original Sloppy Joe Sauce
1 (14.5 ounce) can diced tomatoes
salt and pepper, to taste
1 cup shredded mild cheddar cheese, or more to taste
Preheat oven to 350°
Boil macaroni according to package directions boiling one minute less than package states for al dente pasta. Drain.
Cook ground beef until brown and crumbled. Drain.

In large skillet, heat oil over Med/High heat. Add onion and sprinkle with cayenne. Sauté 3 minutes. Add green pepper and sauté another 3 more minutes and it was tasty leaving a little crunch to the green peppers.
Add ground beef back into the skillet with cooked onions and green peppers. Add in 1 can of Manwich and diced tomatoes. mix well.
Spray a 9x13 baking dish and add cooked pasta. Pour ground beef mixture over the pasta. Stir. Add enough of the second can of Manwich to thoroughly coat the meat, veggies and pasta. You may use the whole 2nd can. Mix well.
Season with salt and pepper. Sprinkle top with cheese.
Bake, uncovered for about 10 minutes, or until cheese is melted and casserole is heated through.
