Lasagna Soup
We loved this! We love lasagna and my mom used to make it every Christmas Eve and we looked forward to that dinner! For some reason I thought it was complicated or time consuming to make and I've only tried making it once! Lasagna has been on my mind lately and I guess you can say that I've been craving it! When I came across some recipes for Lasagna Soup, I was interested and I made some! It was quicker than making a pan of regular lasagna but I missed all of the ooey gooey cheese that regular lasagna has!
It is a hearty soup and the noodles were awesome! Thicker than regular noodles and perfect! I'll be making this soup again! Love in the tummy!
Recipe slightly adapted from Julie's Eats And Treats and I love her blog!
½ pound ground beef, browned and drained
1 pound ground sausage (not links), Johnsville Mild is great, browned and drained
1 (16 ounce) box lasagna noodles, broken, leave out 5 noodles, boil al dente according to box instructions
1 (14.5 ounce) can diced tomatoes
1 (24 ounce) spaghetti sauce
3 cups beef broth
1 cup water
1 Tablespoon dry Italian Dressing Seasoning Mix
1 cup shredded mozzarella cheese
garlic bread, if desired
Brown and crumble hamburger and sausage together in a large pot. Drain. Return to pot.
Break noodles and boil al dente according to box instructions.
Add tomatoes, spaghetti sauce, broth, water and Italian seasoning to the hamburger/sausage. Bring to a boil. Reduce heat and simmer 15 minutes.
Stir in cooked noodles and simmer 5 minutes. Turn off heat and let sit to thicken up, about 30 minutes without stirring.
Serve with mozzarella cheese sprinkled on top and garlic bread on the side if desired.
