Baked Potato RoundsThese were better than a regular baked potato in my eyes! Thin enough to our liking and just all around a perfect side dish! It was cheesy goodness and topped with bacon made these the perfect potatoes! We like sour cream on our baked potatoes so we had sour cream too! Mmmmm, Mmmmm, good! Loved the green onions too! Everything made these perfect! I saw this recipe on Facebook and just remembered the main concept of the recipe so I don't have anyone to give credit to! 4 large baking potatoes, cut into ¼ inch slices 1 stick butter, melted salt and pepper to taste 1 (12 ounce) package bacon, cooked and crumbled 2 cups shredded cheddar cheese 3 individual stocks green onions, chopped sour cream, if desired Preheat oven to 400° Slice potatoes ¼ inch thick. Melt butter. Coat potatoes in butter. I put my melted butter in a bowl and put potato rounds in the bowl to coat them. Place them on a large cookie sheet and season with salt and pepper. I used an 11x17 jelly roll cooking sheet pan. Bake in oven for about 1 hour or until lightly browned. In the meantime cook bacon and drain. Remove potatoes from oven when they are ready and top with cooked bacon and cheese. Continue baking until cheese is melted. Garnish with green onion and serve with sour cream if desired.
