Beef & Tomato Macaroni Soup
This soup is creamy with a little bit of sweet and a little bit of sassy! The original recipe called for Cream Of Tomato Soup but I couldn't find it anywhere so I bought regular Campbell's Tomato Soup and used half & half cream in it! Great substitution!
I love Cavatappi noodles! It's elbow or spiral noodles with ridges in them! The ridges scored in them hold on to the sauce really good! The chili powder and oregano give this soup it's sassiness and the sweet onion and cream give it the sweet so you have a little bit of Sweet and Sassy! Yummy!
Super easy to make and big on flavor!

1 pound ground beef, browned & drained
2 Tablespoons Extra Virgin Olive Oil
1 medium sweet onion, diced
½ cup green bell pepper, diced
½ cup red bell pepper, diced
1 Tablespoon minced garlic
2 Tablespoons chili powder
2 teaspoons dried oregano
salt & pepper, to taste
2 (10¾ ounce) cans Condensed Tomato Soup
½ cup half & half cream
1 (15 Ounce) can diced tomatoes, don't drain
32 Ounces Beef Broth
4 Cups water
2 Cups uncooked Cavatappi noodles, dry, (it's elbow or spiral noodles with ridges in them)
Brown and crumble ground beef. Drain. In the same pot heat olive oil and sauté onions and bell peppers over medium high heat 4-5 minutes. Add garlic for another 1-2 minutes. Return beef to pot.
Add chili powder, oregano, salt & pepper and cook over medium heat for 1-2 minutes, mixing well.
Add tomato soup, cream, diced tomatoes with their juice, beef broth and water.
Bring to a boil. Add pasta. Reduce heat, cover and simmer until the pasta is just al dente.
Serve
