Cabbage Burritos
Great ideal but it didn't work out for me at least! I was so excited to make these! The filling was delicious! Anything with black beans and corn together is a winner in my book! For some reason you could not bite through the cabbage leaves as they were to tough! I don't think you could have cut them with a knife without pushing all the filling out! Maybe someone else will have better luck with them and if so, let me know the secret!
I had some leftover flour tortillas so we ate the burritos that way and we had a wonderful dinner! I really wish the cabbage leaves would have worked out!

8 large green cabbage leaves
1 Tablespoon extra virgin olive oil
1 small onion, diced
1 pound ground beef, browned and drained
2 cloves garlic, minced
2 Tablespoons taco seasoning mix
salt & pepper, to taste
1 (15 ounce) can black beans, drained & rinsed
1½ cups cherry tomatoes, chopped
1 cup corn, canned and drained or frozen
1 cup shredded Monterey Jack
½ cup shredded cheddar
Preheat oven to 350º
Line a baking sheet with parchment paper. In a large pot of boiling water, use tongs to dip cabbage leaves in water for 30 seconds to blanch. Place on a paper towel-lined plate to dry.
In a large skillet brown and crumble beef over medium heat. Drain. In the same skillet heat olive oil and add onion and cook until soft, about 5 minutes, then add garlic 1-2 more minutes. Return beef to skillet and season with taco seasoning mix, salt, and pepper. Stir in black beans, cherry tomatoes, and corn. Mix well and heat thru.
Lay 2 cabbage leaves side by side, overlapping slightly. I only used 1 cabbage leaf because mine were very large. Place a heaping spoon of ground beef mixture in the center, then top with cheese. Fold short sides of cabbage leaves in first, then roll like a burrito. Repeat with remaining beef mixture.
Place on baking sheet and bake until cheese is melted, about 10 minutes.
Luckily I had some flour tortillas and just used these due to the malfunction of the cabbage leaves
