Chocolate Meringue Pie
Growing up I couldn't wait for my Aunt Grace (deceased) to make her Famous Chocolate Meringue Pie! My brother on the other hand couldn't wait for her to make her Famous Butterscotch Pie! The chocolate taste was so good and the meringue was out of this world good! The trick to making a good meringue is having a cold metal bowl to make it in! I put mine in the freezer for awhile to get it good and cold! The crust is also amazing!
Once you have this homemade pie you will never go back to buying a pie! Delicious!
Crust
2 cups flour
1 teaspoon salt
3/4 cups Crisco (solid, not oil)
6 Tablespoons ice water
Mix flour, salt & Crisco until almost dough like. Add ice water and mix well. Roll out in a floured surface and put into sprayed pie dish. Prick with fork to make holes all around. Bake at 350 degrees, 20 minutes. Let cool.
Chocolate Filling
1½ cups milk
3 egg yolks (save whites)
1 teaspoon margarine
3 Tablespoons cocoa
pinch of salt
1 teaspoon vanilla
3 heaping Tablespoons flour
1 cup sugar
Mix well and cook on stove until pudding like texture. Pour into cooled crust. While cooling, make the meringue.
Meringue
4 egg whites
1/4 teaspoon cream of tarter
3/4 cup sugar
pinch of salt
IMPORTANT NOTE:
Make meringue in a cold, metal mixing bowl. Beat egg whites until foamy. Add cream of tarter and salt and beat until soft peaks form. Gradually add sugar and beat until stiff like. Pour onto pie and Bake at 300 degrees for 10 minutes or until peaks barely brown.
