Crockpot Fiesta ChickenMan this was delicious! I love coming home from work and dinner is basically done! We love black beans and corn together and I think next time I'm going to add another can of corn! The Fiesta Corn is so good so try and find that for this recipe! Perfect dinner! Everything was perfect together and I made some rice for this and added some sour cream and tortilla chips on the side. Thanks Sherry for the recipe! Winner, Winner, Chicken Dinner! 1 (15¼ ounce) can black beans, drained and rinsed 1 (15 ounce) can corn, (I'm using 2 cans next time and I bought Fiesta corn) 2 (14½-15 ounce each) cans diced tomatoes, undrained 1 packet McCormick Fiesta Chicken Seasoning Mix About 2 pounds boneless skinless chicken breast, thawed (I bought 2 big breasts and then butterfly cut them in half to get 4 thinner pieces) rice, tortilla chips and sour cream, if desired Spray crockpot or use a liner. Put ½ of all ingredients except chicken in crockpot and mix well. Add chicken to crockpot and then the rest of ingredients and mix well. Cover crockpot and cook 4 hours on high or 8 hours on low. Cook rice if using and when plating place rice on plate and add chicken over rice. Top with sour cream if desired and eat with tortilla chips if desired. Those things were my addition.
