Potato PancakesRecipe comes from my Mom and she has a lot of great recipes that she has passed along to me! We love potato pancakes! Another way to enjoy eating potatoes! The trick to making these perfect is NOT to flip them until one side is completely brown and done! I used to think that making them was complicated or messy but if you let one side get completely done you will have mastered making them! IMPORTANT NOTE: DO NOT FLIP THEM UNTIL COMPLETELY DONE ON ONE SIDE!3 cups leftover mashed potatoes 1 egg, beat before adding to potatoes 2 Tablespoons flour 2 Tablespoons corn meal Salt & Pepper to taste Vegetable Oil Beat the egg and mix it into the mashed potatoes. Add flour and corn meal and mix well. Season with salt and pepper mixing well. Put enough veggie oil into skillet to cover the bottom of the skillet and get it hot. Scoop potato mixture, with an ice cream scooper is best, into the skillet and fry on one side until browned and completely done and then flip it. Fry it until brown.
