Vegetable Beef SoupThis is my Hubby's recipe! He tweaked this recipe for over a year trying to clone his late grandma's veggie soup and he thinks he has it perfect! He is very proud of his soup and when this soup is made in our house, he is the only one who makes it! Delicious! 3 pounds ground beef or chuck 2 cups onion, chopped 4 cups new potatoes, cubed 1/4 head cabbage, chopped 3 cans (12 ounces each) V-8 juice 1 can of each (14 ounces each) beef broth, chicken broth, vegetable broth 1 can (15 ounce) peas & carrots 2 cans (15 ounces each) corn 2 cans (15 ounces each) green beans 1 can (14.5 ounce) crushed tomatoes 1 can water Seasoned salt & pepper to taste In a 8 quart pot, brown beef and 1 cup onion. Drain. Return to pot and add remaining ingredients. Bring to a boil and then simmer, uncovered for 1 hour. In the last 30 minutes of simmer add some more seasoned salt. ( he uses Lawry's) Then let sit 1 hour to thicken and do not stir.
