Jambalaya Pizza
Mardi Gras is over but the Jambalaya Pizza lives on! I say this is a stretch being called a "Pizza" simply because you need to eat it with a fork or spoon but hey I'm not complaining because it tastes amazing!
The pepper jack cheese throughout the rice is delicious! The layer of chunky salsa as the sauce is so good! You don't need Mardi Gras to have this pizza! Definitely use foil with this recipe! Parchment paper may work but I didn't use it! It doesn't slice well so I just spooned it off the foil to a plate! Delicious!
Recipe adapted from MIDWEST LIVING
3 cups cooked long grain rice, cooled
2 eggs, lightly beaten
1 cup finely shredded Pepper Jack cheese
¼ cup onion, chopped
¼ cup green bell pepper, chopped
1 Tablespoon butter
1 Tablespoon minced garlic
1 Tablespoon cayenne pepper, or to taste
½ cup Italian sausage, cooked and cut into cubes (I buy the big links as you might find at the county fairs)
½ cup medium shrimp, tails removed and cut into half and cooked (I buy the already cooked shrimp as used in shrimp cocktail)
1 (16 ounce) jar chunky salsa
3/4 cup shredded mozzarella cheese, or more to taste
Preheat oven to 450°
In large bowl combine cooked rice, eggs, and pepper jack cheese. Lightly coat a 12 inch pizza pan with nonstick cooking spray. Spread rice mixture evenly in pan. Bake 20 minutes. Remove from oven and reduce oven temperature to 425°
In large skillet cook onion and green pepper in hot butter over medium heat for 8 to 10 minutes or until tender, stirring occasionally. Stir in garlic, cayenne, sausage and shrimp. Heat through.
Spread salsa over rice crust, leaving a ½ inch border around. Spread mozzarella cheese. Spread vegetable/meat mixture over cheese.
Bake for 15-20 minutes or until heated through and cheese is melted. Cut into pieces to serve. This is a spoon or fork pizza in my opinion.
Makes 6 to 8 servings.
