Touch Of Sweetness Grilled Chicken
Delicious! Not to sweet, not to spicy, just perfect for our taste buds! I had just bought some fresh pineapple and I needed to use up some sweet chili sauce that I had and this is what I came up with and it was love in the tummy!
We bought a new side by side grill with charcoal on one side and gas on the other and we love charcoal so much and it's been many years since we've had a charcoal grill! Needless to say that we have grilled twice now since spring has sprung (4/9/2017) with the charcoal side and the gas side is still shiny and new!
This recipe has the perfect balance of sweet and spicy! All the flavors work so well together for an awesome grilled chicken dinner!
1 (10.1 ounce) bottle sweet chili sauce (found in the Asian section of grocery store)
½ cup pineapple juice
½ cup brown sugar
¼ cup honey
2 Tablespoons Extra Virgin Olive Oil
garlic powder, to taste
1¾ pounds boneless skinless chicken tenders, thawed
Mix sweet chili sauce, pineapple juice, brown sugar, honey, olive oil and garlic powder in a large Ziploc bag or dish saving ½ cup out of bag for basting while grilling.
Add thawed chicken and marinate in fridge 1 hour or so.
Preheat grill to medium high heat. We used our charcoal grill for this recipe and hubby called it medium high.
Grill chicken about 10 minutes per side, rotating and basting to get a nice char on the chicken. Wait to start basting with the saved marinade until chicken starts to get some color. Adjust cook time according to your grill and chicken is done. It's easy to over cook chicken tenders so just keep your eye on it.
Serve with fresh pineapple if desired.
