Chinese Chicken
I cloned this recipe from the CRACK SLAW recipe that I made which is made with ground beef but this is made with chicken! I love both recipes equally but hubby favors the chicken better! He fell in love with the chicken version!
This recipe goes right along with the eating healthier plan that we are following! Trust me that this isn't just food for watching your weight but food for anytime that you want to impress! It is done in minutes and the taste is out of this world good! The sauce is amazing and the crunch of the Cole Slaw Mix mixed with the amazing sauce and tasty chicken made for a perfect meal! Definitely will be making this again and again!

SAUCE
2 teaspoons Sriracha Hot Sauce
2 teaspoons rice vinegar
2 teaspoons sesame oil
1 teaspoon sesame seeds
6 Tablespoons soy sauce
2 Tablespoons brown sugar
garlic powder, to taste
cracked black pepper, to taste
ground ginger, to taste
crushed red pepper flakes, to taste
1¾ pounds boneless skinless chicken breast, cut into strips
seasoned salt & cracked black pepper, to taste
2 Tablespoons Extra Virgin Olive Oil
½ cup bell pepper, I used red
2 individual stalks green onion, white & green parts diced
1 teaspoon minced garlic
1 (14 ounce) bag Cole Slaw Mix With Carrots
In a bowl mix all sauce ingredients. Set aside.
Slice chicken into thin strips. Season chicken to taste.
In a skillet heat olive oil. Add chicken and cook until juices run clear and temp is 175° with lid on it took 8-10 minutes and stirring occasionally.
Add bell pepper, green onions and minced garlic. Sauté on medium high heat 4 minutes.
Add Cole Slaw Mix and mix well. Add sauce, mix well and cook 3 minutes for a crunchier Cole Slaw and cook longer if you want less crunch.
Serve.
