Honey Lime Chipotle Chicken
What a tasty chicken recipe! The chipotle seasoning may be a tad spicy for some but just add less! It was a nice kick for us! The chicken was nice and juicy and the saucy topping is so good! Honey mixed with lime and some more chipotle seasoning was the perfect topping! Lime was the star of the show but honey was a close second! Everything married well together and we loved this dish!
Can't wait to get the outside grill out for the season and make this on the grill! Yum!
Recipe adapted from DELICIOUS MEETS HEALTHY
1¼ pound boneless skinless chicken breasts, about 2 large breasts and cut them thru center to make 4 thinner breasts
3 Tablespoons Extra Virgin Olive Oil
sea salt and cracked black pepper, to taste
garlic powder, to taste
2 Tablespoons chipotle ground pepper seasoning, divided (Penzeys brand is great)
1 large lime, divided
2 Tablespoons honey
Heat 2 Tablespoons of EVOO in a large skillet.
With the remaining 1 Tablespoon of oil, drizzle on chicken. Season with salt, pepper, garlic powder and 1 Tablespoon chipotle seasoning on both sides of chicken. Cook chicken over medium heat for about 6-8 minutes on each side or until juices run clear and internal temp reaches 165°.
While chicken is cooking make the sauce/topping.
To get the most juice out of a lime put a little pressure on a whole lime and roll it around inside of both hands like a ball. Cut the lime in half and squeeze half of the lime juice in a bowl, saving the other half for later. Add honey and the other 1 Tablespoon of chipotle seasoning. Mix well.
When chicken is done, brush with the honey chipotle mixture.
With the other half of lime, slice and serve as garnish or use juice on chicken.
