Chicken Alfredo Shells
I love Chicken Alfredo and having it stuffed in shells is awesome! Comfort food at it's finest!
Even though I love Alfredo I still consider it to be a "rich" tasting food but that doesn't stop me from wanting it because the richness isn't over the top!
Alfredo mixed with the chicken, spices and cheeses makes for one yummy dish! Stuffing all of those things into the jumbo shells and you have the perfect taste for the taste buds!
Recipe adapted from WHAT THE FORKS FOR DINNER
2 cups boneless, skinless chicken breast, seasoned, cooked in 2 Tablespoons Extra Virgin Olive Oil and then diced
15 jumbo pasta shells
1 (15 ounce) jar Alfredo sauce
1 (15 ounce) container ricotta cheese
1 egg
½ cup parmesan cheese
2 cups shredded Italian Cheese, divided
1 tablespoon Dry Italian Salad Dressing Seasoning Mix
1 teaspoon garlic powder
sea salt & pepper, to taste
basil for garnish
Preheat oven to 350°.
Season chicken and cook in 2 Tablespoons Extra Virgin Olive Oil in skillet until no longer pink. Remove from skillet and dice.
Boil pasta al dente about 9 minutes or so. Drain. Cool.
Spread 1 cup Alfredo sauce on the bottom of a 9x13 inch baking dish.
In a medium bowl mix egg and ricotta. Mix in parmesan and 1 cup shredded Italian cheese.
Add Italian seasoning, garlic powder, salt & pepper.
Add cooked, diced chicken and mix well.
Gently stuff cooked shells with chicken mixture and put shells into baking dish.
Pour remaining Alfredo sauce over the top of shells. Top with additional Italian cheese.
Bake 20-25 minutes or until bubbly and golden brown.
Garnish with basil.
