Mini Whoopie Pies
These turned out great! These are actually my concoction that I came up with because I wanted to make Whoopie Pies for the holidays but I wanted to make easy and fast since I didn't have a lot of time!
We love Kroger's Whipped Icing and they sell it right in piping bags, perfect! You can use any icing that you would like and it will turn out perfect!
The only time that I've ever eaten Whoopie Pies is when I bought them from the Amish! The Amish make them big and rich and they are good but I'd rather eat a smaller version and not so rich! These were the perfect size and richness!
1 (15.25 ounce) box Devil's Food Chocolate Cake Mix plus oil, eggs, water used in directions on box
1 (15.25 ounce) box Strawberry Cake Mix plus oil, eggs, water used in directions on box
Icing, I bought my grocery store, Kroger's, Whipped Icing for these so use any icing that you like
Preheat oven to directions on cake mix boxes.
For each cake mix use oil, eggs and water and mix as directed.
Spray a jelly roll pan, 18x13x1"high. If you don't have a jelly roll pan you want to put this cake mix in the thinnest pan possible because you will have 2 round pieces of cake for each whoopie pie.
Bake according to box instructions which was about 30 minutes in my oven.
Cool 10 minutes and flip out of baking pan. Cool completely.
Using the smallest, round cookie cutter or glass or anything that will cut small circles, cut circles out of the finished cake. You want a top and a bottom to each whoopie pie.
Ice the inside of each bottom round of cake and place the top round on top of icing to make a "sandwich"
Wrap individually in plastic wrap and push together gently.
Refrigerate.
Continue on and make the 2nd flavor cake mix and repeat directions.
Makes about 40 per each box of cake mix.
