Krispy Cheddar Chicken
This chicken was so juicy on the inside and slightly crunchy on the outside! I love recipes calling for Rice Krispie Cereal! Depending on the recipe most of the time the cereal stays crunchy and that's what it did with this recipe!
I make chicken drumsticks with Shake N Bake Original a lot of times because we love it but it was my 1st time using Extra Crispy and it was delicious! I'm going to have to try it on drumsticks the next time I make them! The chicken had a great crunch with the cereal and Shake N Bake and a nice cheesy twist! We really enjoyed our dinner! Yum!
Recipe adapted from THE HAPPY LIFE OF A HAPPY WIFE
¼ cup butter, melted
½ cup All Purpose flour
1 teaspoon salt
1 teaspoon pepper
1 teaspoon garlic powder
1 egg
1 Tablespoon half & half cream
1½ cups shredded cheddar cheese
1 pouch Shake n Bake Extra Crispy
1 cup Rice Krispie cereal
2 boneless skinless chicken breasts, butterfly cut all the way through to make 4
Preheat the oven to 375°. In a 9x13 baking dish pour your melted butter to coat the baking dish.
Mix the flour, salt, pepper, and garlic powder in a bowl.
In another bowl, whisk together the egg and cream.
In a third bowl, combine the cheese, bread crumbs, and cereal.
Keep bowls in that order. Dredge your chicken in the flour mixture, dip in the eggs, then press it into the bread crumb mixture to coat. Press bread crumb mixture into the chicken really good on both sides. Using my hands was the best way and it really stayed on the chicken.
Transfer to baking dish.
Bake 45 minutes or until coating is golden brown and chicken is done. The time will depend on your oven.
