Chocolate Eclair CakeI can't go to a family function without this dessert! My family loves this! I have been making this for many years and got the recipe from a co-worker! The homemade icing is what makes this dessert taste just like an eclair from the hometown bakery! It sure beats any icing from a can! Nice and creamy and it disappears fast! You will always go home with an empty dish! Cake:2 (3.4 ounce each) boxes instant vanilla pudding 3 cups cold milk 8 ounces cool whip 1 box graham crackers (you won't use them all) Icing:1½ cups powdered sugar 2 ounces unsweet Baker's chocolate, melted 1 teaspoon vanilla 3 teaspoon light Karo syrup 2 Tablespoons butter, softened 4 Tablespoons milk For the cake:Mix pudding, milk and cool whip until it is a pudding texture. In a 9x13 pan, put a layer of graham crackers and then spread 1/2 of pudding mixture. Repeat another layer and end with crackers on top. Icing:Mix powdered sugar, melted chocolate, vanilla, Karo syrup, butter and milk until somewhat thick. Spread over top layer of graham crackers. Chill overnight or at least 8 hours.
