Buffalo Chicken Sloppy Joe's
I thought this recipe sounded good and I expected more out of it I guess but it was good! Hubby just thinks it needs more buffalo sauce! The brioche bun was fabulous with this Sloppy Joe mix! I bought Sweet Baby Ray's Buffalo Wing Sauce and it was super good! Not like others that I've tasted which tasted like straight hot sauce!
You know the best way to buy your small amounts of veggies like a 1/3 cup of this and a 1/3 cup of that, I get them off my grocery store salad bar! No leftover, no waste! As for the buttermilk, I got the small amount at work but you could always sub it with heavy whipping cream!
We'll have this again! It was good!
Recipe adapted from Spoonful Of Flavor
1 pound ground chicken, cooked and drained
5 slices onion, diced
1 Tablespoon minced garlic
1 (8 ounce) can tomato sauce
¼ cup chicken broth
¼ cup buffalo wing sauce
1 Tablespoon worcestershire
1 teaspoon apple cider vinegar
1/3 cup carrot matchsticks
1/3 cup celery, diced
sea salt & pepper, to taste
Buns of choice, I used Brioche, toasted
Blue Cheese Ranch Sauce
1 cup plain Greek yogurt
1/3 cup crumbled blue cheese
1 teaspoon mayo
3 tablespoons buttermilk
1 teaspoon fresh lemon juice
½ teaspoon dried parsley
¼ teaspoon dried dill
garlic powder, to taste
onion powder, to taste
sea salt and pepper, to taste
In a sprayed skillet, brown chicken and drain.
While chicken is draining, in the same skillet, saute onion and garlic.
Return chicken to skillet and add remaining ingredients not including buns and Blue Cheese Ranch Sauce ingredients. Mix well and simmer 10 minutes. Turn heat up and cook until liquid is almost gone.
In a separate bowl add yogurt and blue cheese, smashing the blue cheese crumbles with a fork. Add remaining ingredients for sauce and mix well. Refrigerate until chilled.
To serve, toast buns if desired. Add meat to buns and top with sauce.
