Bacon & Tomato Grilled CheeseWe love grilled cheese and all the varieties out there! This was one of the great varieties! Nice melty provolone cheese with the crispy bacon and fresh juicy tomatoes made for one delicious grilled cheese! The crisp toasty bread was the perfect way to complete this sandwich! When spread with mayo instead of butter, it takes the bread to another level! A nice crunch in every bite! Yum! I think this would be great made with yellow American cheese too! My all time favorite way to make grilled cheese! For 1 Sandwich4 slices cooked bacon, drained 2 slices honey wheat bread mayo, to taste 2 slices provolone cheese 2 big slices tomato sea salt, to taste In a cast iron skillet or regular skillet cook bacon until crisp. Drain. Clean skillet. On one side of each piece of bread spread mayo. Place bread in skillet mayo side down. Top with provolone on each side of the bread. Place sliced tomatoes and bacon on one side of bread. Cover skillet until cheese melts. When cheese has begun to melt, place the remaining piece of bread on top of tomatoes and bacon, mayo side up. Flip occasionally until both sides are golden brown and toasty. Serve immediately.
