One Skillet Taco Mac & Cheese
Who doesn't love Mac & Cheese, Taco's and One Skillet Meals? Easy Peasy cooking and clean up!
Delicious! This Mac & Cheese had a Mexican twist, Taco's! I thought it could of used a tad bit more of a taco taste but it was very good! Using an entire packet of Taco Seasoning Mix you would think it would have had plenty of taco taste but more would have been good!
This recipe calls for small pasta and I had a whole box of unopened small sea shells and they were perfect in this! House smelled amazing while this cooked!

1 pound ground beef, browned & drained
1 Tablespoon Extra Virgin Olive Oil
½ cup onion, diced
1 Tablespoon minced garlic
1 (1¼ ounce) packet Taco Seasoning Mix
1½ cups small dry pasta, I used small sea shells
1 cup water
2 cups beef broth
sea salt, to taste
1 large Roma tomato, diced
2 cups shredded cheddar cheese
Diced green onions, for garnish if desired
In a large skillet brown and crumble ground beef. Drain.
In the same skillet heat olive oil and saute onion and garlic.
Return beef to skillet with onion/garlic and add taco seasoning mix, dry pasta, water, beef broth, sea salt and tomatoes.
Cover and cook over low heat for 15 minutes, stirring occasionally.
Uncover and cook on medium heat until most of the liquid is gone, stirring occasionally.
Turn off heat and add 1 cup of the shredded cheese mixing cheese in well. Add the remaining cup of cheese to the top and let melt completely.
To serve garnish with green onion if desired.
