Baked Parmesan Chicken Nuggets
OMGoodness, these babies were delicious and the house smelled amazing while they were baking! I adapted this recipe from SIMPLY RECIPES and the breading only made enough for 1 pound of chicken so I made a 2nd batch of breading for the 2nd pound of chicken! My roasting pan only held 1 pound of chicken anyway so it worked out perfect! I would suggest making your 2nd batch of breading separate so it is fresh and not all buttered up!
The taste of these were amazing! The Italian bread crumbs with the shredded parmesan cheese and the seasonings made for the best chicken nugget that I've ever eaten and they aren't fried! YAY! These are a must try if you like chicken nuggets!
This only makes enough breading for 1 pound of chicken so double for 2 pounds but separate
1 stick butter/margarine or ½ cup, melted (no substitution)
1 teaspoon minced garlic
1 cup Italian bread crumbs
½ cup shredded Parmesan cheese
2 Tablespoons dry Italian Salad Dressing Seasoning Mix
salt & pepper, to taste
1/4 teaspoon garlic powder
2 pounds boneless skinless chicken breast, cut into nugget size pieces
Preheat oven to 450°
Dry chicken pieces with paper towels as it will help the chicken pieces have crispy breading.
In a small bowl melt butter and minced garlic. In another bowl mix together the bread crumbs, cheese, Italian Seasoning, salt, pepper and garlic powder.
Dip chicken pieces into the garlic butter and then into the bread crumb mixture to coat, making sure to coat with hands pressing mixture into chicken.
A dark colored roasting pan is the best to use as it will brown chicken much better on one side.
Place chicken in roasting pan, not over crowding.
Drizzle with remaining garlic butter you may have left
Bake uncovered 15-20 minutes, or until chicken is cooked through and juices run clear. Chicken will brown more on the bottom side than the top.
