Leftover Spaghetti Pizza
What to do with leftover spaghetti? I had found 2 recipes on Pinterest that interested me with leftover spaghetti and one was Leftover Spaghetti Grilled Cheese and this recipe which comes from About.com!
Delicious! Little bits of burnt cheese throughout the saucy spaghetti and the melted mozzarella on top with the pepperoni! The spaghetti held together nicely but leaving it cook for the entire 8-10 minutes without disturbing it is the key!
Hubby had 3 pieces and I had 2! Fantastic dinner!
2 eggs
1/3 cup heavy cream
1/3 cup grated Parmesan cheese
8 ounces leftover cooked spaghetti, mine already had some sauce and meat in it as leftovers
3 tablespoons butter
½ cup pizza sauce
1½ cups shredded mozzarella cheese
10-15 slices pepperoni
In medium bowl combine eggs, cream, and Parmesan cheese and mix well. Add spaghetti and toss until the pasta is coated well.
In a 12 inch skillet melt butter over medium-high heat. Add the pasta mixture and spread evenly. Cook, pressing down occasionally on the pasta with a spatula until the bottom is well browned, about 8-10 minutes. The easiest way that I found to flip this was to get my round pizza baking sheet which was a tad bigger than the pizza in the skillet and I flipped it onto that and it flipped perfect. To flip, put the round baking sheet over the top of the skillet and holding both tight together, flip it quickly. I did this over the sink.
On that baking sheet, I cooked pizza on the stove burner for another 6-7 minutes or until the bottom is browned.
Preheat oven to broil.
Remove from heat and top with pizza sauce, cheese, and pepperoni even if you already had some sauce and meat in it as leftovers. Broil the pizza on the same baking sheet until the cheese melts and starts to brown, about 3-5 minutes.
Serve immediately.
