Instant Blender Strawberry Ice CreamI lucked out finding this recipe posted by Salsa on Taste Of Home! You don't need an ice cream machine, just a blender! I have a blender so I was in business! The texture of this was more like sherbet! I read that sherbet, which is alternatively spelled sherbert, is a frozen fruit and dairy product that contains anywhere from 1 percent to 3 percent milk fat from milk or cream. Anything above 3 percent is generally labeled ice cream; anything below 1 percent is referred to as water ice. Sherbet is the exact ingredients that this recipe called for! A delicious, refreshing treat on a hot summer night! We loved it! The sweetness was perfect and strawberries were the star in this recipe! It took just minutes to make this and I mean a couple of minutes and off to the freezer it went! Checked it at 2½ hours and it was ready! Delicious! 24 ounces frozen sweetened strawberries (do not thaw completely just enough to chop) ½ cup sugar 1½ cups heavy whipping cream Chop the frozen strawberries then place in a blender. In a bowl whisk the sugar into the cream; with the blender going, slowly add in the cream/sugar mixture through the opening in the lid, stopping to stir the mixture 3-4 times. Blend until smooth but still with small bits of strawberries in the mixture (the cream will thicken slightly). Transfer to a shallow pan and freeze until firm (about 2-3 hours).
