Chocolate Covered Bacon
While on our recent vacation we stopped in a candy store that specialized in homemade salt water taffy! They also made a host of other candies and chocolate covered bacon was one of them! My hubby bought a piece and immediately said, "you're going to make this"
Split decision in my house as to the bacon being fully covered in chocolate or one side being covered! I was running low on the chocolate for the last 4 pieces so I coated one side for them! I liked them both ways but there was more of a bacon taste to the one sided! Hubby and son liked one sided best and daughter and I like it fully covered best! But, we all liked them both ways! I think just drizzling it would be the best way now that I think about it!
Make sure you cook the bacon crispy and use thick bacon! You want the bacon to hold together with the chocolate!
The Sea Salt makes these perfect! Sweet and salty is a great combination! I would definitely call these a special treat! Bacon and chocolate, Yum, Yum!
2 pounds thick bacon (must be thick)
12 ounces semi-sweet chocolate chips
Sea Salt
In a well seasoned cast iron skillet fry bacon until crispy but not burnt. Any skillet will do but I used my cast iron. Drain on paper towels.
In a large bowl microwave the chocolate chips, stirring in 1 minute intervals until melted, about 3 minutes.
Using a pair of tongs to hold the bacon, lightly coat each piece of bacon on both sides. Lay on parchment paper. Sprinkle with Sea Salt.
Refrigerate until chocolate has set.
