Gaudrey's Incredibly Delicious Roast I made this tonight for dinner! This roast is so good. It's nice to have a roast recipe without potatoes and carrots in it! I used a 3 pound, beef, rump roast and during the last hour of cooking it, I shredded the beef. I didn't have the mushrooms because Hubby and kids would of had a fit! This recipe is a keeper and if you like roast you need to try this one! I didn't thicken the gravy because I served it with warm french bread and mashed potatoes. The bread was awesome dipped in the juice. 4 to 6 pound beef roast, even the toughest will be perfect 1 large onion, sliced, optional 8 ounces fresh button mushrooms, optional 12 ounce can coca cola 2 cups bottled chili sauce, near the ketchup in the store 2 tablespoons dry Ranch Dressing mix Wash roast and pat dry. Spray the inside of a large crock pot with cooking spray. Trim off all visible fat from the roast. Place sliced onion and mushrooms in the bottom of the crock pot. Place roast on top. Mix the coca cola and chili sauce and pour over the meat. Sprinkle Ranch Dressing mix on top of the roast. Cover and cook on low 5 to 6 hours, or until fork tender. Lift out roast and pour cooking juices into a saucepan to thicken for gravy on the stovetop adding a flour/milk slurry to the juice. If desired, you may strain the drippings first, but the bits of onion and mushroom are delicious in the gravy.
