Chili Dog Casserole
This is one delicious recipe! I want to start off by saying that when I first stumbled upon this recipe, I knew if I made it, I would be making it with my homemade chili and that's exactly what I did! I put a pot of chili on this morning and this afternoon I scooped some out with a slotted spoon to make this recipe! I didn't measure but put enough to cover the bottom of a 8x11 glass baking dish and enough to cover the tortilla's on the top!
I bought Jumbo Hot Dogs for this recipe and they weren't as long as the tortilla's so I used my kitchen shears and cut the empty ends of the tortilla's off and it worked perfect! I think if you buy the bun length hot dogs, they should fill up the entire tortilla but maybe to thin of a hot dog!
Another thing I might change would be to put a little chili and cheese inside the tortilla and hot dog before rolling it up but it was delicious as is! Just a thought!
2 (15 ounce) cans chili with beans (I made homemade)
1 (16 ounce) package beef frankfurters
10 (8 inch) flour tortillas
1 (8 ounce) package Cheddar cheese, shredded
Preheat oven to 425 degrees F (220 degrees C).
Spread 1 can of chili and beans in the bottom of a 9x13 inch baking dish. (I used 8x11 and it was perfect)
Roll up franks inside tortillas and place in baking dish, seam side down, on top of chili and bean 'bed'. Top with remaining can of chili and beans, and sprinkle with cheese.
Cover baking dish with aluminum foil, and bake at 425 degrees F (220 degrees C) for 30 minutes.
