Teriyaki Chicken Bake
Welcome to my Chinese kitchen! In my opinion, this recipe taste better than any Chinese restaurant can make! No more Teriyaki Chicken takeout for us! The sauce is so good! You could drink this stuff! OMGoodness, you will love this! I made this in an 8x11 dish and my hubby could have eaten the whole dish! I had to remind him that there were others who needed to eat!
Crazy easy to throw together and it will taste like you slaved over it! I used the stir fry veggies with broccoli, carrots, snow peas and water chestnuts! Yum! A total Asian flair! All the spices and soy sauce balanced each other out for the perfect flavor! If you like a less salty dish, you can use low sodium soy sauce! It wasn't to salty for us but we like a little salt!
This is definitely going into our dinner rotation!
Recipe adapted from Oh Sweet Basil
1¼ pounds boneless skinless chicken breast, cut into bite size pieces
salt & pepper, to taste
¾ cup soy sauce
½ cup water
1/3 cup brown sugar
1 tablespoon honey
¾ teaspoon ground ginger
1 teaspoon sesame oil
1 teaspoon minced garlic
2 tablespoons corn starch
2 tablespoons cold water
¾ cup white rice, cooked (Minute Rice is good)
1 (12 ounce) package stir fry veggies
Preheat oven to 350°
Cut chicken into bite size pieces. Season with salt and pepper.
In a medium saucepan, stir together the soy sauce, water, brown sugar, honey, ground ginger, sesame oil, and garlic. Bring to a boil and cook 1 minute.
In a small bowl, stir together the water and cornstarch. Add 1 teaspoon of the hot soy mixture to the cornstarch mixture and then slowly pour everything into the boiling soy mixture, whisking until it begins to thicken. Set aside.
Place the chicken in a sprayed 8x11 baking dish and pour 1 cup of the teriyaki sauce over the chicken. Bake 30 minutes.
Cook rice according to package instructions.
Steam veggies until desired tenderness and then add the veggies and cooked rice into baking dish with chicken.
Add 3 tablespoons of the remaining teriyaki sauce and stir to combine.
Place dish back in the oven for 15 minutes.
Remove from oven and drizzle with a little more sauce.
Serve.
