Beef LombardiWhat do I love about winter? All the scrumptious casserole dishes that I can make! [ ] This recipe was love in the tummy! Delicious! The noodle mixture was crazy good with the cream cheese, sour cream and the Italian seasoning that I added! Layered with the diced tomatoes, beef and melted shredded cheese, YUM, YUM! The beef and tomatoes really need the salt, pepper and other spices you might like! So spice it up! [ ] 1 pound ground beef, cooked and drained 1 (14 ounce) can diced tomatoes 1 teaspoon minced garlic 2 teaspoons honey salt pepper, to taste 8 ounces egg noodles, cooked and drained 4 ounces cream cheese, softened 6 green onions, chopped 2 teaspoons Dry Italian Salad Dressing Seasoning Mix ½ cup sour cream 1½ cups shredded Cheddar cheese Preheat oven to 350° Brown beef over medium heat. Drain. Add garlic to skillet and saute. Return beef to skillet. Add tomatoes, honey, salt and pepper. Lower the heat and simmer 15-20 minutes. In a separate pot, boil noodles according to package directions and drain. Combine the cooked noodles with the cream cheese, green onions, sour cream and dry Italian salad dressing seasoning mix. Mix well. Spray a 9 X 13 pan and alternately layer noodle mixture, tomato mixture and shredded cheese, ending with the cheese on top. Bake 30 minutes uncovered or until heated through and bubbly.
