Chicken Lettuce Wraps
We love PF Changs and their Chicken Lettuce Wraps! You can see them on almost every table when you are dining and they are being eaten as an appetizer! Some may eat them for their meal as my hubby has done before!
I have seen many copycat recipes for these and decided that I needed to try my hand at making them! I went on the hunt for the recipe and decided to use a little of this and a little of that for the recipe that I made and boy did I score a home run with what I made! We loved them and my hubby was absolutely raving about them! We will be having them many more times to come!
They key to getting these just as good as PF Changs is to make sure you crumble the chicken as it cooks, dice the water chestnuts small and get some fresh crisp lettuce! The crunch from them in the crisp lettuce wrap is amazing, along side of the perfect Asian flair! All of the Asian ingredients work so well together! You control the heat with the amount of Sriracha (hot sauce) that you use! Leave it out and I think they will still be delicious!
These are the perfect low carb meal that is very filling! YUM!
1 pound ground chicken
1 tablespoon minced garlic
1 onion, diced
1 teaspoon sesame oil
1 teaspoon teriyaki sauce
ΒΌ cup hoisin sauce
2 tablespoons soy sauce
1 tablespoon rice wine vinegar
1 tablespoon freshly grated ginger
1 teaspoon Sriracha, more or less to taste
1 (8 ounce) can water chestnuts, drained and diced small
2 green onions, sliced (save some for garnish if desired)
salt and ground black pepper, to taste
1 head Boston lettuce aka butter lettuce, leaves separated
Heat a skillet over medium high heat and add ground chicken, cooking until browned and making sure to crumble the chicken as it cooks. Drain if needed. Add garlic and onions to skillet and saute. Return chicken to skillet.
Stir in sesame oil, teriyaki sauce, hoisin sauce, soy sauce, rice wine vinegar, ginger and Sriracha mixing well. Stir in water chestnuts and green onions. Season with salt and pepper. Let everything cook together about 3-4 minutes or until warmed through.
Separate lettuce leaves.
To serve, spoon chicken mixture into the center of a lettuce leaf and eat as you would a taco. Garnish with green onion if desired.
