Chicken Pizza Melt
I had a recipe saved for Chicken Taco Melt and the more I thought about it the more I decided I wanted to change it up because the thought of diced tomatoes inside of a biscuit just didn't sound good to me! So I had some leftover Chef Boyardee Pizza Sauce that I needed to use up and that's when Chicken Pizza Melt was created and it was soooooo good and a great decision on my part!
The Italian seasoned chicken all mixed up with pizza sauce and mozzarella cheese made for one great delight tucked inside of a homestyle biscuit! We have basically given up carbs but you've got to have some carbs in your life or you risk not feeling to great! I found out the hard way recently when my sugar dropped super low from no carbs in my system and what a better way than a biscuit to get them carbs!
I think Homestyle biscuits and Not Flaky are the way to go! I think flaky would fall apart as far as layers go! Delicious meal!
2 small boneless skinless chicken breast or enough to make 2 cups shredded chicken
1 Tablespoon Dry Italian Salad Dressing Seasoning Mix, divided
salt & pepper, to taste
1 Tablespoon Extra Virgin Olive Oil
1 cup pizza sauce
1 cup shredded mozzarella cheese
1 (8 count) package Grands Homestyle Biscuits, NOT FLAKY
1 Tablespoon butter, melted
grated Parmesan cheese for sprinkling tops of biscuits
Preheat oven to 375°
Season chicken on both sides with half of the dry Italian seasoning mix, salt and pepper.
Add olive oil to a skillet and heat to medium high. Add chicken and cook until done 8-10 minutes or inside temp reaches 175°. Remove from skillet and shred chicken.
Return to pan and add pizza sauce, remaining Italian seasoning, salt & pepper and mozzarella cheese. Mix well and simmer until cheese is melted thru.
Remove biscuits from package and shape each one into an oblong shape, stretching the sides and all around to as big as you possibly can to make room for the chicken mixture.
Place biscuits on a baking sheet and fill the center with chicken mixture, about 1 heaping Tablespoon per biscuit, leaving room around the edges. Fold in half and pinch edges together.
Melt butter and brush on folded biscuits and sprinkle with grated Parmesan cheese. I used the green container Parmesan.
Bake 15-20 minutes or until biscuits are done and lightly brown.
Serve.
