Big Mac Pie
This was a Low Carb recipe originally but I didn't make it that way! The information on how to make it Low Carb is at the end of this review!
I was very interested in making this recipe because we love Big Mac's every now and then! It was delicious with a little "on the fence" about the pickles! We love pickles but we felt this was a little much! We would take a bite with pickle and then pick the pickle out of the next bite! What The Heck, we couldn't make up our minds about the pickles! So my thoughts are, since there was no indication in the recipe on whether to dice the pickles, leave them whole or even what type of dill pickle to use, I say use less than ½ cup and they are easily picked out when left whole if you decide it is to much! And this is coming from a pickle lover!
Other than the pickle dilemma this was delicious! The creaminess from the Thousand Island and sour cream was awesome, along with the melted cheese and perfectly seasoned beef, it made for a very flavorful dinner! Will I make this again? Yes but I might leave out the pickle! I feel like this is a "Pickle Post"
1½ pounds ground beef, browned and drained
¼ cup onion, diced
1 Tablespoon chicken bouillon
onion powder, to taste
garlic powder, to taste
8 ounces shredded cheddar cheese
½ cup heaping Thousand Island dressing
3 eggs, beaten
¼ cup sour cream
½ cup dill hamburger chip/sliced pickles, or less to taste
Preheat oven to 375°
In a large skillet, brown ground beef and drain. Add onions to skillet and saute. Return cooked ground beef back into skillet with onions and season with chicken bouillon, onion powder, and garlic powder. Mix well and heat for a few minutes.
In a large bowl, place cheddar cheese, Thousand Island dressing, beaten eggs, sour cream, and dill pickles. Mix together thoroughly. Add to ground beef in skillet and mix well.
In a sprayed 9-10 inch round baking pie dish, add mixture.
Bake 30 minutes.
