Porcupines In A SkilletDon't you just love the name of this recipe? So cute! I love using dry onion soup in recipes and it was the star of this recipe! It was the prominent flavor but tasted so good paired together with the diced tomatoes, rice and beef! It seems like I've tasted this flavor before but I can't put my finger on it! Maybe it will come to me sooner or later! We really enjoyed this meal! Something different and we like ground beef recipes other than burgers! I served this with garlic knots! There is no need to season this with any other seasoning because the onion soup brings plenty of flavor! Perfect flavor! Recipe comes from THIRTY HANDMADE DAYS www.thirtyhandmadedays.com/2013/10/dinner-ideas-porcupines-skillet/1 pound ground beef, brown & drain 1 package dry onion soup mix 1½ cups hot water 3/4 cup uncooked rice (Minute Rice works great) 1 (16 ounce) can diced tomatoes 1 small can mushrooms (optional) 1 cup shredded cheese In a large skillet, crumble beef and brown. Drain. Stir in onion soup mix, water, tomatoes and mushrooms. Add rice and stir. Cover and cook on low heat for 25 minutes or until rice is tender. Sprinkle with cheese, melt and serve.
