Southwestern Stuffed Peppers
I got the idea for this recipe from my friend Star (starshineeliz)! I made it just a little different from her recipe because I like to cook my ground beef first before stuffing it in a pepper and I baked it on a baking sheet and not in diced tomatoes in a pan! Other than that I followed her recipe!
We love stuffed peppers and this is our 1st time having southwestern style! I usually make Italian! These were delicious! We loved the tad bit of spice but you can control the amount spice by using a different cheese and using mild salsa! The pepper jack cheese was perfect for these stuffed peppers! The beef seasoned with taco seasoning with rice, swimming in salsa was a perfect combination! I bet adding some corn and black beans would be good in these as well! You could leave out the beef and have a vegetarian meal!

1 pound ground beef, browned & drained
1 (1 ounce) packet taco seasoning mix
1 cup white minute rice
1 (24 ounce) jar chunky salsa (you will have some leftover)
4 bell peppers, (a mixture of colors)
8 ounces shredded pepper jack cheese, (I bought a block and shredded it)
Preheat oven 350°
Cook and drain ground beef. Prepare rice according to box instructions. Cut peppers in half removing cores and seeds.
Place beef back in skillet and season with taco seasoning. Mix well.
Add rice and most of the salsa to beef/rice mixture and mix well, heating to simmer for a few minutes.
Stuff peppers with beef mixture and place on a baking sheet.
Top each pepper with shredded pepper jack cheese.
Bake 45 minutes to 1 hour.
Serve
