Salsa Meatloaf Bites
OMGoodness, these little meatloaf bites are super delicious! I know one thing, the next whole meatloaf that I make is going to be this recipe! These are fantastic! We had them for dinner along with some veggie rice but these would be so good as appetizers for a get together!
The salsa makes this recipe! Not only does it make the bites tasty, it also keeps everything moist and not dry at all! The club crackers are the perfect binder that holds it all together! Finishing the bites off with more salsa and cheese is what takes them to the top!
Very simple and easy to make! Just rolling meatballs!

1 pound lean ground beef
2 tablespoons dried, minced onion (I used real onion, diced)
1 egg
16 buttery crackers (I used Club crackers)
2 cups shredded cheddar cheese, divided
1 cup chunky salsa, divided (I used a little more)
Preheat oven to 400°
Place crackers in a ziploc bag, seal, and crush.
Place ground beef, onion, egg, 1 cup shredded cheese, and 1/2 cup salsa in large mixing bowl. Add crushed cracker crumbs and mix to thoroughly combine ingredients (hands work best).
Press meat mixture evenly among 12 muffin cups. I used a sprayed cookie sheet and got 15 meatloaf bites.
Bake for about 25 minutes, testing to be sure meat is no longer pink and reaches internal temperature of 160 degrees or above.
Top each meatloaf with a spoonful of remaining salsa and sprinkling of cheese. Bake an additional 5 minutes until cheese is melted.
