Veggie & Barley Bowl
A great Meatless Monday dish or anytime! A great recipe to use up your fresh garden veggies and Farmer's Market finds! I love all the veggies used in this dish with zucchini being my favorite! They work well together on the taste buds! Delicious!
The Chili Lime Vinaigrette is soooooo good and simple! It is drinkable straight from the blender! This was my first time ever making something with chipotle peppers in adobo sauce and it won't be my last! I was always afraid it would be to spicy but I was wrong! Scraping the seeds from the middle of the pepper was key! Perfect!
The Chipotle Lime Vinaigrette jazzes up the veggies and barley and tastes so good! It's the perfect vinaigrette for chicken, salad, veggies and I'm sure I'll find out more things the more I make it and that's a given that I'm making it again! You will want to pour it on instead of drizzle! I'm going to double the vinaigrette next time and there will be a next time and many more! I have fallen in love with chipotle peppers in adobo sauce! Yum!
YAY to summertime and fresh veggies!
Recipe comes from a guest chef that we had at work!
1 small red onion, cut into chunks
1 medium zucchini, cut into chunks
1 small red bell pepper, cut into chunks
1 small green bell pepper, cut into chunks
10-12 cherry tomatoes, whole
1 (12 ounce) frozen corn, thawed
2 tablespoons extra virgin olive oil, more if needed for cooking veggies
salt & pepper, to taste
1 (14.5 ounce) vegetable broth
1 cup barley, cooked & drained
Chipotle Lime Vinaigrette
1/4 cup extra virgin olive oil
2 tablespoons lime juice
1 tablespoons red wine vinegar
1 tablespoons honey
1 tablespoon minced garlic
1 teaspoon cumin
1 small chipotle pepper in adobo sauce, seeds removed
salt, to taste
Chop onion, zucchini and bell peppers into bite size chunks. In a skillet heat olive oil and add all veggies including tomatoes and corn. Saute until veggies are tender.
In the meantime, in a pot, bring vegetable broth to a boil. Add barley and cook according to box instructions. Drain.
For the Chipotle Lime Vinaigrette, add all ingredients to a blender and blend until smooth.
To serve, place barley in a bowl, top with veggies and drizzle with vinaigrette.
