One Skillet Sausage & Pepper Mac & Cheese
I love one skillet meals because there isn't much to clean up and I love recipes that use breakfast sausage, marinara and half & half! These 3 things together make for one creamy, Italian dish! To top it off it's mac & cheese too!
There is one thing I will do different next time and that is to add the dry noodles later in the boiling/simmer stage because 20 minutes is way to long for the noodles to cook! They were mushy cooking that long and it would be a a lot better with them being al dente! I would say to add them with 10 minutes or close to it, in the final cooking stage! We just overlooked the noodles because the rest of the dish was perfect! We talked about them but it didn't ruin our dinner! I served this with garlic knots! Yum!

1 pound ground pork sausage, browned & drained (Jimmy Dean Breakfast Sausage is great)
½ bell red pepper, diced
½ green bell pepper, diced
2 cups dried elbow macaroni
2¼ cups marinara sauce
2¼ water
1/3 cup half and half
½ cup shredded mozzarella cheese
In a large skillet cook sausage on medium heat, until meat is brown and in crumbles. Drain.
Add diced bell peppers, dried elbow macaroni, marinara sauce, and water. Bring to boil; reduce heat to simmer. Simmer, covered, for about 20 minutes until macaroni is tender, occasionally stirring. Honestly, I would wait to put the noodles in because you want them al dente and not mushy. 20 minutes was way to long for the noodles. 10 minutes should do it.
Add half and half, sprinkle with cheese, and mix everything well.
Remove from heat, cover and let it sit for about 2 minutes or until cheese melts.
