Mom's Sweet Potato CasseroleIt's not Thanksgiving without Mom's Sweet Potato Casserole! My family and myself don't like sweet potatoes but we love this casserole! I think it's the sweetness with the potatoes that makes it so good! 3 cups hot mashed sweet potatoes 1/2 cup sugar 1/2 tsp. salt 2 large eggs, lightly beaten 1/4 cup margarine, softened 1/2 tsp. vanilla 1/2 cup milk Topping1/2 cup light brown sugar 1/3 cup flour 1 cup pecans, chopped 2 Tablespoons margarine Preheat oven to 350 degrees. Mix potato ingredients and put into sprayed 1½-2 quart casserole dish. Combine topping ingredients and mash together well with a fork or pastry blender. Sprinkle on potatoes and bake 35-45 minutes.
