Mini Deep Dish Pizza Cupcakes
These were great for our Super Bowl spread! Gone in a flash! Easy to throw together and the toppings can be endless with whatever you like! A pizza cupcake, what's not to like about that?
Ooey, gooey cheese in pizza dough with the spice from the oregano and pepperoni was a delight!
I found that after baking these, the pepperoni made the top a little greasy but that was an easy fix! I let them cool down a bit and then dabbed the tops with a paper towel! Perfect! Delicious!

Cooking spray
Yellow corn meal
16 ounce package store bought pizza dough
8-12 ounces pizza sauce
8 ounces shredded mozzarella cheese
½ cup freshly grated Parmesan cheese
oregano
mini pepperoni slices or pizza toppings of your choice
Preheat oven to 425° and spray cavities of a muffin pan with cooking spray. Sprinkle with yellow corn meal.
Remove pizza dough from packaging and allow it to come to room temperature on a floured surface. Using a rolling pin or your hands, roll out into a thin layer. Using either a round cookie cutter, an egg fry ring, or even an empty can, cut rounds out of the dough.
Using your fingers, stretch the dough without tearing and press into muffin cups.
Place a pinch of mozzarella cheese in first to prevent crust from getting soggy. Top with 1-2 tablespoons of pizza sauce, more mozzarella cheese, and some parmesan cheese. Sprinkle with oregano and add your favorite pizza toppings. Sprinkle with more parmesan cheese.
Bake 15-20 minutes, or until crust is golden brown and cheese is melted and bubbly.
