Vegetable Coleslaw
One of our favorite local restaurants, Gabby's, serves the best Vegetable Coleslaw and Gabby's is the first place we've ever tried it or even heard of it! I knew I had to try and clone it at home! I could see and taste what veggies were in it and I figured the dressing was homemade but knew I'd never get their recipe for that but have created my own! It was awesome! Creamy! So tasty with the crunch of the shredded slaw mix with all the crunchy veggies except for the peas! The peas weren't crunchy! They were the smooth touch that worked perfect with all of the crunch! Everything soaking up the dressing made for the best coleslaw I've ever eaten! The different veggies in this slaw is genius! You won't believe how delicious this is! I'm thinking next time I make this I'm adding thinly sliced radishes! Mmmmm, Mmmmm, Mmmmm Good!
4-5 cups Traditional Classic Coleslaw Mix
½ cup peas (I got mine from Kroger salad bar)
¾ cup broccoli florets, chopped small (from Kroger salad bar too)
½ cup green bell pepper, diced small
½ cup red bell pepper, diced small
½ cup red onion, diced small
In a large bowl mix everything well.
Cover and refrigerate 2 hours or longer.
Mix well before serving.
Dressing
½ cup mayo
3 Tablespoons red wine vinegar
1 heaping teaspoon Wasabi paste not powder, found in the Asian section of the grocery store
salt, to taste
¼ cup sugar
Mix well and add to slaw/veggie mix. Cover and refrigerate 2 hours or longer.
