Crockpot Chicken Parmesan Soup
Welcome to my Italian kitchen! That is exactly what my entire house smelled like all day while this was cooking and hours later too! This soup was delicious and perfect for the cold winter day that we had!
All the ingredients were perfectly matched and tasted awesome together! We love chicken parmesan baked or fried and now we can add soup to the list! My hubby loves when I cook with crushed tomatoes! He tolerates all the recipes I make with chunky tomatoes, which are my favorite! He tolerates them or picks them out! So he was one happy camper with his favorite, crushed tomatoes!

This recipe comes from Foxes Love Lemons
dry Italian dressing salad seasoning mix, to taste
3 garlic cloves, minced
1 green bell pepper, chopped
1 (14.5 ounce) can crushed tomatoes
1/2 pound boneless, skinless chicken breasts, thawed
3 cups chicken broth, plus additional if needed
1/2 cup chopped white onion
1/2 cup shredded Parmesan cheese, plus extra for garnish
1 tablespoon chopped fresh basil
2 teaspoons chopped fresh oregano
1/8 teaspoon red pepper flakes (or more if you like it spicy)
4 ounces (uncooked) dry gemelli or penne pasta (I used elbow macaroni)
Chopped fresh basil or parsley, for garnish
Sprinkle dry Italian dressing salad mix on both sides of chicken. Let sit 15 minutes.
In crockpot, stir together garlic, bell pepper, crushed tomatoes, chicken, broth, onion, parmesan cheese, basil, oregano and red pepper flakes.
Cook on high 3½ hours or on low 7 hours.
Transfer chicken breasts to cutting board and coarsely shred; return to crockpot. Stir in pasta. Cook on high 30 minutes longer or until pasta is cooked al dente. If soup becomes too thick after pasta is cooked, stir in additional broth until desired consistency is reached, and warm through.
Serve garnished with extra Parmesan cheese and chopped basil or parsley.
Served with garlic knot rolls.
