One Pot Chili Mac & Cheese
I love one pot meals! Less dishes and usually one pot meals are delicious with everything cooking together and this was one delicious meal on a cold, windy day! The perfect Chili Mac and something out of the norm for us! I would say it was similar to my goulash but very jazzed up! We loved both types of beans used in this and all the cheesy goodness pasta! Very filling and a hearty meal! So easy to make too!
I adapted this recipe from DAMN DELICIOUS damndelicious.net/2014/03/15/one-pot-chili-mac-cheese/ and I love her blog! She has some great recipes!
1 pound ground beef, cooked and drained
1 tablespoon olive oil
2 cloves garlic, minced
1 small onion, diced
1 small green bell pepper, remove seeds and dice
4 cups chicken broth
1 (14.5-ounce) can diced tomatoes
1 (15 ounce) can white kidney beans
1 (15 ounce) can kidney beans
2 teaspoons chili powder
1 teaspoon cumin
Kosher salt and freshly ground black pepper, to taste
6 ounces uncooked elbows pasta
1 cup shredded cheddar cheese
2 tablespoons chopped fresh parsley leaves
In a large pot, brown and crumble ground beef. Drain.
Heat olive oil in the same pot. Add garlic, onion and green bell pepper. Saute 5-7 minutes.
Stir in chicken broth, tomatoes, beans, chili powder, cumin and cooked ground beef. Season with salt and pepper, to taste. Bring to a simmer and stir in pasta. Bring to a boil, cover, reduce heat and simmer until pasta is cooked through, about 12 minutes.
Remove from heat. Top with cheese and cover until melted, about 2 minutes.
Serve immediately, garnished with parsley and more cheese, if desired.
