Southwestern Crispy Grilled Turkey & Cheese
Fantastic sandwiches! The crispy, crunch of the grilled sandwich is amazing! The butter mixed with the parmesan cheese and garlic was the perfect spread for the outside of these sandwiches! The inside of the sandwiches were just as spectacular as the outside! Fresh oven roasted turkey breast with melted Colby Jack cheese lined with fresh from the garden tomato and spinach all nestled between the chipotle mayo which wasn't to spicy, just the right touch! You can control the amount of heat in the mayo by using very little pepper or using a lot!
It's funny how each summer we are either hooked on sandwiches or hooked on salads but never on both! This summer is sandwiches and last summer was salads!

MAKES 2 SANDWICHES
ΒΌ cup finely grated fresh parmesan cheese
3 Tablespoons softened butter
1 Tablespoon minced garlic
4 slices rustic bread (Italian bread is great)
4 thin slices Colby jack cheese
4 thin slices deli turkey breast lunch meat
a few leaves fresh spinach
1 tomato, thinly sliced
4 Tablespoons mayonnaise
1 teaspoon chipotle pepper, diced
Combine parmesan cheese, butter and garlic in a small bowl. Set aside.
Combine mayonnaise and chipotle peppers in another small bowl. Set aside.
On 2 slices of bread, spread chipotle mayo. Layer a slice of cheese, 2 slices of turkey breast, a couple slices of tomato, a few leaves of spinach, another slice of cheese, and top with another slice of bread. Repeat on other sandwich.
Spread the butter mixture on the outside of the 4 slices of bread and cook on a sprayed griddle over medium heat for about 3-4 minutes per side, until golden brown and crispy.
