Grilled Chicken BLT
I haven't been so excited about a chicken sandwich in a long time! This sandwich was amazing! It was super amazing! I tried a sandwich similar to this at Cracker Barrel quite some time ago and knew I could make it at home but I waited until the fresh summer tomatoes were in! I took Cracker Barrel to school! My chicken was so much tastier and better all the way around! The sandwich was nice and juicy from the big, red, home grown tomato and the Italian seasoning was the trick to the perfect seasoned chicken! I put good ole Hellman's Mayo on my sandwich and hubby wanted Ranch Dressing and both ways are delicious! Hannah (daughter) just had chicken, bacon and colby cheese on her sandwich! She doesn't know what she is missing by not liking mayo, tomatoes or lettuce! Silly Girl!
What a great way to use up your fresh garden tomatoes! You won't be disappointed, I promise!
2 boneless skinless chicken breast, butterfly cut to make 4 pieces
Italian Salad Dressing Dry Seasoning Mix
8 slices bacon, cooked and drain
1 large tomato, sliced
Lettuce
Mayo or Ranch salad dressing
Hamburger buns
Butter
Season chicken on both sides with Dry Italian Salad Dressing Seasoning Mix.
Cook bacon and drain on paper towels.
Grill chicken on medium high heat 6-7 minutes per side or until internal temp reaches 165°
Slice tomatoes, cut and wash lettuce.
Butter the inside of buns. Place on griddle and toast buns butter side down.
To assemble sandwiches, spread mayo or ranch on bun and add lettuce, chicken, bacon and tomato.
