Pepperoni Pizza Grilled Cheese
I love all the variations of grilled cheese out in the recipe world and I've made quite a few of the different recipes! This one stacks up with the best!
Don't feel like having pizza but want something like pizza then this is the recipe you are looking for! The crunch of the grilled bread with the garlic butter slathered on it, the spice of the pepperoni and the ooey gooey cheese makes for the perfect grilled cheese! Don't forget your favorite warm marinara to dip this awesome grilled cheese in! My hubby said, "this is the shit" He sure knows how to give a compliment which he was giving a good one!

8 slices of bread (I used Brownberry Italian White Bread)
¼ cup butter (softened)
1/8 teaspoon garlic powder (or more to taste)
1 teaspoon Italian seasoning
1 package sliced pepperoni (I used ¼ pound big round pepperoni from the deli)
8 ounces shredded mozzarella cheese, divided
½ cup grated parmesan cheese
marinara sauce (for dipping)
In a small bowl mix together softened butter, garlic powder, and Italian seasoning. Warm the sliced pepperoni for a few seconds in the microwave (10-15 seconds) or on the stove top over medium heat.
Spray and Pre-heat a skillet to medium heat. Spread the garlic butter over one side of a slice of bread. Place butter side down in the skillet. Top with mozzarella cheese, as much pepperoni as you want and a sprinkle of parmesan cheese. Butter an additional slice of bread with the garlic butter and place butter side up on top the sandwich.
Cook in the skillet until lightly browned on the bottom and flip over. Continue cooking until the other side has browned and the cheese has melted. Repeat with remaining sandwiches.
Cut in half and serve with warm marinara sauce for dipping.
