Reuben Quesadillas
My mom's birthday is the day after St. Patrick's Day and my mom loves Reubens so I went to her house and made her dinner! I told her ahead of time that it was something she absolutely loved but I was making it in a different form! Surprise, Surprise, she had no clue what I was making! I had her sit in the living room with my dad and my hubby as I cooked dinner! I decided to make quesadillas because I had some leftover tortillas that I wanted to use up and I thought why not make Reubens! Perfect! She loved them and was totally surprised!
My dad really doesn't care for sauerkraut and neither does my hubby so my hubby suggested I make his with corned beef, swiss cheese and mustard! Great idea and that is how I made his and my dad's and they loved them! I loved them that way too since I tried a bite of my hubby's!
Delicious both ways!
For 1 Quesadilla
1 large flour tortilla
4 thin slices corned beef
4 slices thin baby swiss cheese
1 tablespoon Thousand Island Salad Dressing
1/2 cup sauerkraut, drained well and pat with paper towel
butter spray
Spray griddle or skillet with cooking spray and heat over medium heat.
Lightly spray the outside of tortilla with butter spray.
Lay tortilla out then spread salad dressing, layer corned beef staggered on top of each other going in towards the middle then cheese and sauerkraut the same way.
Cook until lightly brown on one side, then fold in half, press down, then flip folded tortilla over and cook until lightly brown on the other side.
Cool 5 minutes, then slice into wedges.
