Loaded Campfire Potatoes
Fantastic potatoes all folded up in foil! Perfect for the grill or campfire! Diced potatoes all buttered up and ready to mingle with some cheese and bacon! What's not to like about that? A yummy surprise in foil and a great side dish!
This was a great time to use my Chop Wizard! I sliced the potatoes a half of an inch thick and diced them in my Chop Wizard! My cubes were in perfect uniform size and shape and they cooked perfect!
When we were eating, we decided having sour cream as a topping would make the perfect loaded potato but no sour cream to be found in my fridge but I did add it as an ingredient for next time!

6 cups Baby Yukon Gold Potatoes, about 10 potatoes, sliced then cubed
salt & pepper, to taste
3 Tablespoons butter, divided
1 small onion, sliced
1 cup shredded cheddar cheese
4 Tablespoons Soft Bacon Bit Pieces
green onions, diced, optional for garnish
sour cream, optional for garnish
Spray 2 large sheets of heavy duty foil. Divide potatoes evenly on foil spreading them vertical and leaving room on the sides and ends. Sprinkle with salt & pepper. Top with onions. Divide butter equally across onions. Sprinkle with cheese and top with bacon pieces.
Fold foil leaving room on the top. You don't want it smashing the cheesy potatoes.
Place foil packets on grill and grill on medium/high heat 30-45 minutes with the grill lid closed. Check at 30 minutes to see if potatoes are done.
Release the steam from packets gently when opening.
Let cool for a few minutes and then top with green onion garnish and sour cream, if desired.
